The English muffin molds (available online and at most cooking stores) are so essential to their perfectly round shape, and worth the purchase. The soufflé-style pancakes are a common delight found in Japan—they are ethereal and mellow yet completely rich, with a marigold color coming from plenty of fresh eggs in the airy, whipped batter. Topping them off with a generous sprinkle of toasted almonds, honey butter, and maple syrup will change your pancake game forever. I assure you!
